Crispy Roasted Potatoes Recipe: 3 Ingredient Method for Perfectly Cooked Potatoes
Roasted in duck fat on the Odyssey 3T BBQ, this foolproof recipe yields deliciously crispy potatoes with a fluffy interior.

Method
- Prep the Potatoes: Peel and cut the potatoes into suitable roasting chunks.
- Preheat the BBQ: Fire up the Odyssey 3T BBQ and heat it until it reaches an internal temperature of 200 degrees Celsius.
- Boil the Potatoes: Boil the potato chunks in a pot until they’re soft and easily forked.
- Drain and Fluff: Drain the water from the pot, keeping the potatoes inside. Add a generous amount of sea salt and gently bash the potatoes around to create fluffy edges.
- Set Up the BBQ: Turn off the middle burner of the Odyssey 3T and set the outer burners to low. Remove the centre grill and replace it with a cast iron skillet.
- Add Duck Fat: Pour duck fat (or canola oil with a high smoke point) into the skillet.
- Roast the Potatoes: Place the potatoes in the skillet, checking every 10-15 minutes to ensure they are browning evenly.
- Finish and Serve: Once crispy, remove the potatoes from the skillet, top with more cracked sea salt, and enjoy!
