Cooking the Perfect Pork Roast

Ingredients
1kg boneless centre-cut pork loin roast
2 tsp garlic powder or 6 cloves minced garlic
1 ½ tsp onion powder or 1 large minced onion
1 tsp salt
1 tsp poultry seasoning
1 tsp chili powder
Olive oil
Method
1. Preheat your BBQ to 220℃.
2. While your BBQ is preheating, lightly slice a hatch pattern on the pork. A little tip is to cut into the skin, but not into the flesh. This will help the meat absorb the flavours better.
3. Rub olive oil all over the meat. Sprinkle over the spices and rub them in as well.
4. Place the roast, fat side up on the grill. Roast for 30 minutes at 220℃.
5. Lower the temperature to 160℃ and continue to roast for 50 minutes.
6. Get a probe thermometer to check the temp of the meat. For a medium roast, the thickest part of the meat should be around 63℃. For medium to well done, it should be around 68℃. For well-done pork roast, it should be around 77℃.
7. If you don’t have a probe thermometer, you can just use a fork to check the meat’s juices. Pierce the thickest part of the meat and if the juice running out is pink, you should keep cooking until the juice runs clear.
8. After roasting, let the meat rest for about 15 minutes before carving.
